Receta: Galletas de cúrcuma y jengibre / Recipe: Turmeric & ginger cookies

Hoy os quiero explicar una receta que hace tanto tiempo que me pedís por redes. Se trata de las buenísimas galletas de cúrcuma y jengibre que nuestro Chef Albert prepara para los desayunos del hotel.

Today I want to explain a recipe that you have requested several times: Our delicious turmeric & ginger cookies that our Chef Albert prepares for the hotel breakfast. 


Hoy os cuento la "versión casera" de la receta y algunos tips para hacerla más "profesional".


INGREDIENTES
(para unas 80 galletas)

125 gr mantequilla
150 gr de panelao azúcar de caña
450 gr de harina integral de espelta
Ralladura de la piel de un limón
16 gr levadura
1 pizca de sal
1 cc de jengibre en polvo
1 cc de cúrcuma en polvo
1 cc de canela en polvo
3 huevos

cc: cucharada de café

I post the ‘home-made version’ of the recipe and some tips to make it more ‘professional’. 

INGREDIENTS
(80 cookies approx) 
 
125g of butter 
150g of raw cane sugar
 450g of spelt whole flour 
Grated lemon skin 
16g of leavening 
A pinch of salt 
1 coffee spoon of ginger powder 
1 coffee spoon of turmeric powder 
1 coffee spoon of cinnamon powder 
3 eggs


Amasar la mantequilla y el azúcar panela con las manos hasta que la mantequilla se haya desecho. Añadir a la masa la harina, la ralladura de limón, la levadura, la sal, el genjibre, la cúrcuma y la canela. Amasar bien. Una vez tengamos la mezcla bien amasada, añadir los huevos uno a uno.

Knead the butter and the raw cane sugar with your hands until the butter is melted. Add the following ingredients: flour, grated lemon, leavening, salt, ginger, turmeric and cinnamon. Knead well. Once the dough is properly knead, add the eggs one by one. 





Con la masa final podemos empezar a hacer las formas de las galletas con las manos, a nuestro gusto. Si las preparas con niños déjales crear otras formas y medidas... cocinando también estimulamos nuestra creatividad!

With the final dough we can shape the cookies with our hands, the way we like them. If you prepare them with children, let them create other shapes and sizes… We also stimulate our creativity when cooking! 





Colocar las galletas en una bandeja de horno sobre papel de cocina, separadas las unas de las otras pues crecen un poco al cocerse. Calentar el horno a 180º y cocer las galletas durante 10 minutos (hasta que se doren).

Put the cookies on an oven tray on kitchen towels, leaving some space between the cookies because they grow a little bit when being cooked. Heat the oven at 180º and cook the cookies during 10 minutes (until they brown).



Tip de nuestro Chef
Ya veis que es muy sencilla la preparación de esta receta... os daré un tip más profesional que realiza nuestro Chef Albert cuando prepara las galletas para el restaurante. 

Una vez amasada toda la masa, hacer con ella una forma alargada (como si fuera un "churro") y colocarla en el congelador. Una vez la masa esté dura, cortarla con un cuchillo. La idea es que queden como monedas. Una vez cortadas colocarlas al horno 10 min a 180º y listo!!! Con el truco de Albert conseguirás que las galletas queden más homogéneas y "perfectas".
 
The preparation of this recipe is very simple... I will give you a more provisional tip that our Chef Albert uses when he prepares the cookies for our restaurant. 
 
Once the dough is knead, make a long shape with it (like a ‘churro’) and put it in the freezer. Once the dough is tough, cut it with a knife. The idea is that they look like coins. Put them in the oven for 10 minutes at 180º and that’s it! With this trick you will get more homogeneous and perfect cookies!
