Receta: mermelada de higos / Recipe: fig conserve

Me gusta vivir en el campo para poder observar los ciclos completos de la Naturaleza. En primavera y verano la Naturaleza nos ofrece una gran variedad de frutos, y las conservas y mermeladas nos van a permitir guardarlos y gozar de ellos durante todo el año.

What I love about living in the countryside, is being able to observe the full cycles of nature at close range. In spring and summer nature offers us a great variety of fruit, and making conserves and jams allows us to store their abundance, and enjoy them all year round. 



En la Era de la masía tenemos una majestuosa higuera. En junio nos regala brevas y a finales de septiembre y octubre deliciosos higos. Creo que la mejor manera de comer los higos es cogerlos directamente del árbol y comerlos en el mismo instante... su dulzura y sabor son realmente exquisitos.

In the Big Terrace area of the masía we have a wonderful fig tree. In June it provides us with brebas, and at the end of September and October, a whole bounty of delicious figs. I think the best way to eat figs is straight from the tree, on the spot, right there and then…their sweetness is really exquisite



Pero nuestra higuera es muy generosa y produce tantísimos higos que hemos decidido hacer mermelada.

However, our fig tree is incredibly generous and has produced such a quantity of figs this year, that we decided to make a fruit conserve. 




Hoy os quiero explicar cómo hacer una buena mermelada de higos. En esta ocasión Edel, amiga de la familia y buenísima cocinera, me ayuda a presentaros la receta.

Today I want to explain how to make a really good fig jam. On this occasion, Edel, a family friend and fabulous cook, is helping me to present the recipe. 


INGREDIENTES
1Kg de higos pelados
300gr de azúcar (150gr blanco y 150gr panela)
Zumo de 1 limón
Tarros de cristal

INGREDIENTS 
1Kg of peeled figs 
300g sugar (150g white and 150g raw cane sugar)
 Juice of 1 lemon 
Glass jars 



1. Esterilizar los tarros de cristal hirviéndolos en una olla.

1. Sterilise the glass jars by boiling them in a saucepan. 


2. Pelar los higos.

2. Peel the figs. 






3. Añadir los higos a una olla juntamente con el azúcar y el zumo de limón. Para hacer la receta hemos utilizado 150gr de azúcar blanco y 150gr de azúcar panela.

3. Add the figs to a saucepan along with the sugar and lemon juice. To make this particular recipe we have used 150g of white sugar and 150g of raw cane sugar. 



4. Dejar hervir la mezcla e ir removiendo durante una media hora, hasta que consigamos la textura deseada. Si nos gusta más líquida podemos pasar un poco el "turmix" pero no es necesario (personalmente me gusta encontrar en la mermelada algún trocito de higo, la hace más auténtica).

4. Let the mixture come to the boil, and slowly stir for half an hour, until you get the desired texture. If you like a more liquid-based conserve a blender can be used to loosen the mixture a little, although it is not strictly necessary. (I personally like to find a little chunk of sweet fig in my conserve, which makes it even more authentic). 


5. Llenar los tarros de cristal con la mermelada aún caliente y tapar imediatamente.

5. Fill the glass jars with the still warm conserve and close immediately. 




6. Si deseamos que la mermelada nos dure una buena temporada (un año aproximadamente) deberemos poner los tarros al baño María para que de esta manera se haga el vacío.

6. If we want the conserve to last for a long period (approximately a year) the jars should be prepared in a bain-marie so they are properly sealed. 



Las mermeladas de frutas son muy sencillas de hacer, podéis realizarlas con los más pequeños de la casa y son muy gratificantes porque os durarán mucho tiempo.

Yo las acostumbro a consumir en el desayuno, con una rebanada de pan, pero cuando más me gusta es combinada con queso. Podéis preparar a vuestros invitados una buena ensalada con mermelada y queso o una tabla de madera con surtido de quesos y mermeladas (la combinación de dulce y salado es exquisita).

Fruit conserves are very simple to make, and can be created at home with the youngest members of the family. It is an extremely satisfying and long-lasting creation! 

I usually enjoy having fig conserve with breakfast, spread over a slice of toast, but my absolute favourite combination is with cheese. You can prepare a wonderful salad with cheese and conserve, or a wooden platter with a selection of cheese and different conserves to match (the combination of savoury and sweet is divine). 


Idea: con un simple trocito de tela cortada en forma de círculo y una goma podéis presentar la mermelada bien bonita para regalar.

Idea: decorate the conserves with a simple circular piece of material and an elastic band, and you have a beautiful jar of fruit conserve to offer as a gift. 


Si lo deseáis podéis extrapolar la receta a otros frutos y crear mermeladas variadas, eso si, cada fruta, dependiendo de sus características, va a necesitar más o menos azúcar. Os recomiendo que consultéis en internet.

If you wish, you can use the same recipe with other fruits and create a whole variety of different fruit conserves. However, each fruit, depending on its characteristics, will require more or less sugar. We recommend that you consult the different quantities on line.
