I would like to share the recipe for the banana sponge cake that we make in the masía for breakfast. It is really easy to make, extremely tasty and moreover, completely gluten and dairy-free.
INGREDIENTES
140 gr de harina sin gluten
150 gr de azúcar panela
2 huevos ecológicos
5 cucharadas soperas de aceite de oliva
7 gr de levadura
4 plátanos maduros
Molde
INGREDIENTS
140 g gluten-free flour
150 g panela sugar
2 free-range eggs
5 dessert spoons of olive oil
7 g baking powder
4 ripe bananas
Cake mould
1. Calentar el horno a 180ºC.
1. Heat the oven to 180ºC.
2. En un bol, mezclar la harina sin gluten, el azúcar panela, los huevos ecológicos, el aceite de oliva, la levadura y 2 de los 4 plátanos. Batir todos los ingredientes.
2. In a bowl, mix the gluten-free flour, the panela sugar, the free-range eggs, olive oil, baking powder and two of the four bananas. Beat the ingredients.
3. Preparar un molde, preferiblemente desmoldable. Antes de tirar la masa, poner una base de papel de cocina. Untar la base con aceite de oliva y espolvorear un poco de harina sin gluten para evitar que el bizcocho se pegue al molde.
3. Prepare the cake mould, preferably a detachable one. Before pouring in the dough, line with baking paper. Grease the base with olive oil and dust with a little gluten-free flour to avoid the sponge sticking to the mould.
4. Una vez que quede una masa homogénea, poner la mezcla en el molde.
4. Once the dough is evenly mixed, pour into the mould.
5. Cortar en pequeñas rodajas los dos plátanos sobrantes y colocar las rodajas, con cuidado, encima de la masa que hemos colocado en el molde.
5. Cut the remaining two bananas into fine slices, and place carefully on the dough which has been poured into the mould.
6. Introducir nuestro bizcocho en el horno y dejar cocer unos 30 o 40 minutos aproximadamente a 180º. Sacar del horno, dejar enfriar un poco y listo para comer!!!
6. Place the sponge in the oven and bake for approximately 30 to 40 minutes at 180º. Remove from the oven, allow to cool a little, and it is ready to eat!!!
